Un aspecto clave que debe resaltarse es la cultura alimentaria de la población en cuanto a la selección de alimentos se refiere. La metodología de trabajo estuvo en función de la revisión bibliográfica y su correspondiente análisis. El retorno a la producción agroecológica implementada por las comunidades campesinas, pueblos originarios y comunidades étnicas debe ser un punto neurálgico en la consecución de la seguridad alimentaria.
