Sumario:Mycostatine can be used in selective media for the isolation of Lactobacillus plantarum from the brine of fermented olives. The antibiotic inhibits the growth of film yeasts at low concentration, and it does not seem to interfere with the normal lactic acid fermentation. Even though the antibiotic is somewhat unstable, its action lasts long enough in the media to make it possible the isolation of the slow growing lactic acid bacteria.
