Sumario:This research analyzes the management of inventories and catering in the supply chain of the dairy sector in Colombia, with emphasis in the Colombian Caribbean region. This sector is strongly influenced by the changes of climate conditions such as weather seasons, droughts and even social protests that affect negatively the continuous and normal functioning of the supply chain. In this sense, an optimization model is presented which considers the key variables of the system, parameters and restrictions that determine its behavior. Finally, scenarios for improvement of the system are proposed.
